Winter Harvest Apple Salad

Winter Harvest Apple Salad 

Serving size, 4

From the Cutting Board:

  • 2 cups chopped fresh romaine
  • 2 cup chopped baby spinach 
  • 1 cup kale cabbage slaw (or any cabbage slaw of choice)
  • 1 organic Fuji Apple chopped 
  • ¼ cup dried cranberries 
  • 1 tbsp blanched almonds
  • 1 tbsp chopped walnuts 

optional additions

  • 2 cup of either sweet potatoes or butternut squash
  • 2 cup shredded rotisserie chicken

To the Salad Bowl:

Toss all ingredients together in a poppyseed dressing of choice (my favorite store bought is Brianna's, although there is added sugar) or I'll make my own (Paleo Leap recipe below). Enjoy this dish as a side salad with a hearty fall or winter meal. If you are looking to make this salad a meal in itself, try adding 2 cups of chopped sweet potatoes or butternut squash and 2 cups of shredded rotisserie chicken!

Paleo Leap strawberry poppyseed dressing:

  • 1/3 cup strawberries, chopped;
  • 1 garlic clove;
  • ⅓ cup raw honey; (optional)
  • ⅓ cup white wine vinegar;
  •  ½ cup olive oil;
  •  1 tablespoon poppy seeds;
  • Sea salt and freshly ground black pepper;
