Homemade Shrimp Stir Fry w/ Fried Rice

We’ve been eating a lot of shrimp since I gave up meat for lent. It’s a good thing my husband 1. likes fish & 2. eats whatever I cook! I have been buying uncooked, de-veined, tail-off, wild caught shrimp from Sprouts meat department and it’s been so easy to prepare. Stir fry has always been one of my favorite meals. It’s such an easy way to get a ton of veggies, protein, & complex carbs in one meal. Check out my recipe below.

From the Cutting Board:

Stir Fry

  • 1 handful of fresh green beans, cut in half
  • 6 asparagus spears
  • ¼ zucchini, diced
  • ¼ yellow squash, diced
  • ¼ red bell pepper, diced
  • ½ cup broccoli
  • ¼ yellow onion, chopped
  • ½ tbsp sesame oil
  • 1 tsp garli

Fried Rice

  • 5 baby carrots, diced
  • 3 green onions, chopped
  • 1 tsp garlic
  • 3 eggs scrambled
  • 1 tsp sesame oil
  • 1 cup of whole grain brown rice
    • (quinoa works well too, Andrew prefers rice!)


  • 2 tbsp stir fry sauce (teriyaki works well too!)
  • ½ - 1lb raw, de-veined, tail off, shrimp
  • ½ tsp vegetable oil

Additional ingredients:

  • Sesame oil
  • Stir Fry sauce
  • Peanut butter
  • Sriracha
  • Sesame seed

To the Stove Top:

First put on your pot of rice since it takes the longest to cook. Next dump all the vegetables for the stir fry into a steamer basket and let the veggies steam until they are cooked to your liking. While the veggies are steaming, heat oil in a wok or large skillet over medium heat.  Add shrimp cooking 2 to 3 minutes.  Add 1 tsp. garlic and cook 2 more minutes.  Be careful to not over cook the shrimp.  You’ll know they are done when they are a soft pink color. Transfer shrimp to plate.  Next start working on the rest of the fried rice. Heat ½ tsp. sesame oil in wok and add the garlic, green onion, and carrots. Next whisk 3 eggs and poured them into the hot wok stirring until fully cooked. Once the rice has finished cooking, add the scrambled egg, carrot & onion mixture to the pot of rice and throw in a tbsp of stir-fry sauce (soy sauce or liquid aminos work well too). Now transfer the steamed veggies and shrimp to a heated wok w/ ½ tsp. sesame oil & stir-fry sauce. The final step is totally up to you… you can combine the fried rice & the shrimp/veggie mixture in the wok and have one giant stir-fry dish or you can keep them separate. I like to top my stir-fry bowl with Sriracha, sesame seeds, and a tsp. of crunchy peanut butter! I love Asian dishes with peanut flavor!
