Pumpkin Acai Bowl

Once again I'm back with more of my pumpkin obsession, this time adding it to a delicious homemade acai bowl. I make a protein smoothie bowl as least once a week. Acai bowls are one of my favorite meals in part because they remind me of home, San Diego! I wanted to make this bowl feel less like summer and more like fall, so naturally I added pumpkin & other yummy spices! Check out my recipe below!

Ingredients:

Smoothie base:

  • 1 packet of unsweetened acai (I buy the Sambazon brand, make sure it has 0g of sugar!)
  • ½ scoop vanilla protein powder (I like egg white protein or amazing grass protein superfood)
  • 1 cup spinach kale chard blend
  • 1 tbsp ground flax
  • 1 tsp MCT oil
  • 1 tsp maca powder
  • 1/4 cup organic pumpkin
  • 1/4-1/2 cup unsweetened almond milk 
  • Ground Cinnamon, pumplin spice, and nutmeg to taste

Toppings:

  • Chopped raw walnuts & almonds & raw pepita seeds
  • Organic berries (I use blackberries, raspberries & strawberries)
  • Unsweetened coconut flakes
  • Local bee pollen
     

Blend together all the smoothie base ingredients to your desired consistency, add more almond milk as needed. Pour your pumpkin acai mixture into a bowl and top with berries, nuts, coconut flakes and bee pollen. I enjoy this smoothie bowl with a warm cup of coffee for a perfectly delicious fall breakfast!
