Paleo Pumpkin Chocolate Chip Balls

- This recipe is gluten, dairy, and refined sugar free!!

- makes a dozen cookies

Ingredients:

  • ½ cup coconut flour 
  • ½ tsp pumpkin spice
  • ½ cup canned pumpkin
  • ½ tsp gluten-free baking soda
  • 2 tbsp. melted coconut oil
  • ¼ cup 100% pure maple syrup
  • 1 egg
  • ½ cup unsweetened organic apple sauce
  • 1/3 cup Enjoy Life Gluten & Dairy free mini chocolate chips

Directions:

Preheat oven to 350 degrees. Combine flour, pumpkin spice, canned pumpkin, and baking soda into a mixing bowl. Mix well. Pour in the melted coconut oil, maple syrup, egg and apple sauce. Using a mixer or whisk blend all ingredients until the mixture is smooth. Add in the chocolate chips and mix one last time. Scoop small 1-2 inch balls and shape with your hand. Bake for 11-14 minutes in the preheated oven.

These cookies are moist and dense. The bottoms will brown, but that’s about it. Mine took roughly 12-13 minutes to bake.
