Paleo Frittata

So I find myself making an egg scramble everyday which results in lots of time in the kitchen chopping veggies, frying bacon and whisking eggs. That’s when the idea hit me to make one huge breakfast scramble. Here’s what I mixed up:

From the Cutting Board:

Preheat the oven to 350 degrees F

  • 12 eggs
  • ¼ cup almond milk
  • 4 pieces of uncured bacon
  • 2 Aidell’s chicken apple sausages
  • 1 cup spinach chopped
  • ¼ zucchini chopped
  • ¼ yellow squash chopped
  • ½ sweet red pepper chopped
  • 6 asparagus spears chopped
  • 2 heads of broccolini chopped

To the Mixing Bowl:

Add the chopped veggies, bacon and sausage to one large mixing bowl. In a separate bowl whisk together the 12 eggs and almond milk. Once whisked, add the eggs into the vegetable/ meat mixture and fold together until well combined. Grease your baking dish (I used a Lodge cast iron skillet) with ghee or coconut oil and pour in the egg & veggie mixture. Bake in the oven for 30-40 minutes or until the eggs are set. Remove from the oven and let cool for 5-10 minutes. Enjoy right away or store in the refrigerator.

I like to warm a slice of breakfast scramble in the toaster oven for 4-5 minutes before enjoying in the morning. You can top it with anything you like. Try avocado, salsa & fresh cilantro for a Mexican flare or add a dollop of my cheeseless pesto and fresh basil for an Italian spin. Or just throw some hot sauce on top for something quick and easy! The options are endless.

This is meal prepping at its finest. It’s easy, healthy, and delicious! You no long have to worry “what’s for breakfast”? And you just saved yourself time too!
