Green Paleo Protein Pancakes

-This breakfast treat is free of grains, gluten, and dairy!

Ingredients:

  • 1/3 cup Birch Benders Paleo pancake mix
  • 1 scoop collagen powder
  • ½ scoop vanilla bone broth protein powder
  • 1 tbsp ground flax seed
  • 1 handful of spinach
  • 1 dash of cinnamon
  • ½ cup water
  • ¼ banana *optional

Toppings:

  • Raw chopped nuts
  • Almond butter
  • Organic raw honey or pure maple syrup
     

Directions:

Combine dry ingredients in a bowl. Then mix spinach, water, and dry ingredients in a blender pulsing until smooth. Add banana if desired. Heat a nonstick skillet on medium heat with grass fed butter or ghee. Pour batter to make two large pancakes. Cook until pancakes brown on each side. Top pancakes with almond butter, chopped nuts and raw local honey or maple syrup!
