Fajita Style Crock Pot Shredded Chicken

FROM THE CUTTING BOARD:

  • 2 boneless skinless organic chicken breasts
  • 1 red pepper sliced
  • 1/2 zuchini sliced
  • 1/2 yellow squash sliced
  • 1/2 jalapeno sliced, with or without seeds depending on how much heat you want!
  • 1/2 yellow onion diced
  • 1/2 cup organic chicken broth

     Homemade Taco Seasoning

  • 1 tbsp chili powder
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 2 tsp cumin (the more the merrier!)
  • 1/4 tsp dried oregano
  • 1/2 tsp paprika
  • crushed red pepper flakes, salt & pepper to taste

TO THE CROCK POT:

Transfer all the ingredients from the cutting board to the crockpot. Add the taco seasoning and let the mixture cook on low for 6 hours. Once cooked, start shredding the chicken with a fork or tongs then let it sit for 5-10 minutes while soaking up the savory juices. You're now ready to add the chicken to your... tacos, burritos, taco salad, burrito bowl, nachos, breakfast burrito... really anything you want. ENJOY!!!
