Egg White Pesto Scramble

From the Cutting Board:

  • 3 egg whites, whisked
  • 1 Aidell's chicken artichoke & garlic sausage
  • 1 cup chopped veggies (I used broccolini, asparagus, zucchini & squash)
  • 1 small handful spinach
  • 1 tbsp pesto (see my cheeseless recipe here)
  • 1 tsp olive oil
  • Pine nuts & fresh basil to garnish
  • Salt and pepper to taste

To the Stove Top:

First steam your cup of chopped veggies in a small pot. While the veggies are steaming add the spinach and chicken sausage to a small pan with olive oil. On medium heat, cook spinach and sausage until the spinach has wilted down. Next add the steamed veggies to the pan along with the 3 whisked egg whites. Cook on medium heat until all the eggs are cooked to your liking. Turn off stove and add the pesto to the pan. Mix until the scramble is coated with pesto. Add salt and pepper to your liking and garnish with pine nuts and fresh basil. Enjoy this yummy dish any time of the day, breakfast, lunch or dinner!
