CLEAN EATS: Crockpot Chicken & Vegetable Soup

There are two phases to this soup. The meat phase and the vegetable phase. We will start with the meat phase.

FROM THE CUTTING BOARD:

  • 2 organic boneless skinless chicken breasts
  • ½ tsp each dried oregano, rosemary, parsley, basil,
  • ¼ tsp  crushed red pepper
  • 1 bay leaf
  • 1-2 organic chicken broth- 32oz boxes
  • 3 fresh basil leaves (chopped)

TO THE CROCK POT:

Pour a layer of organic chicken broth (approx. ½ cup) to cover the bottom of your crockpot. Transfer chicken and seasonings from the cutting board to the pot. Cook on low heat for 6 hours. I like to check the chicken about every 1-2 hours (if I’m home). During the last hour of cooking I start pulling the chicken breasts apart with a fork or tongs. When times up, shred both chicken breasts with your fork or tongs to create a big ol’ pot of shredded chicken! 

ON TO THE VEGGIE PHASE!

FROM THE CUTTING BOARD:

Mirepoix:

  • 4 large carrots
  • 4 stalks of celery
  • 1 yellow onion
  • 1 tbsp organic olive oil

     
  • 6-7 asparagus spears
  • 1 heaping handful of green beans
  • 1 red pepper
  • 1 zuchini
  • 1 yellow squash
  • 1 handful of mushrooms
  • 3-4 stalks of fresh kale (I used purple because it was pretty!)
  • 3-4 stalks of fresh Chinese cabbage
  • 5 cloves of garlic

TO THE SOUP POT:

Transfer your chopped mirepoix mixture into a 6 qt. soup pot on your stovetop and cook on med-high heat until the onions become translucent. Next pour the remainder of one box of organic chicken broth into your soup pot along with all the chopped vegetables from the cutting board. You may need more broth, so add as necessary. I always like to keep 2 boxes of broth in my pantry at all times. Cook uncovered until the soup begins to boil, then cover and turn down to a simmer. Once the soups been simmering about 20-25 minutes, dump EVERYTHING from the crock pot into the soup. VIOLA! You’ve got yourself a big pot of vegetables & lean meat. 

This is one of the healthiest cleanest meals you can eat! We like to make a big pot of this on a Sunday to eat for lunch and dinner throughout the week!
