Cauliflower Rice Burrito Bowl

Quick n easy burrito bowl made right here in our hotel room!

 

Ingredients:

  • 1/2 cup cauliflower rice seasoned with cilantro & salt
  • 1/4 cup mashed organic black beans
  • 1/2 cup ground chicken seasoned w/ fresh salsa, Cholula , onions & red peppers
  • 1 handful of spinach
  • 1 tbsp homemade guacamole
  • 1 tbsp fresh chopped onions 
  • Hot sauce to taste

Directions:

Steam and sautee cauliflower mixture until the "rice" is cooked to your liking. In small pot heat up black beans and mash. Add water if needed. In a non stick skillet cook ground chicken with onions and diced red peppers. Once meat rice and beans are cooked add them to a big bowl and top with fresh spinach, guacamole, chopped onions and hot sauce.  


I made this bowl for my husband and I in our extended stay hotel room. We have a kitchenette in with two burners and no oven. I bought a small skillet & steamer basket to go along with the pots provided by the hotel. I cook our dinner in shifts and it's working so far. Best of all, we are eating REAL food every night even though we aren't in our own kitchen. I meal prepped yesterday in order to make my life easier during the week when putting meals together. Nothing really changes with our eating habits whether we are home or on the road because it's a lifestyle. I sure am glad Andrew eats everything I whip up!
