Cauliflower Fried Rice

Why haven’t I been making cauliflower rice dishes more often? Holy cow, I am late to the party! It’s SOOOOO EASY to make! My latest recipe is seriously good. I don’t like to brag, but I think I could eat this meal every day. I love me some Asian cuisine and this dish is just what the doctor ordered! Here’s my recipe for seriously delicious Cauliflower Fried Rice!!

From the cutting board:

  • ½ head cauliflower
  • 1 egg
  • 1 piece bacon
  • ¼ cup chopped broccolini
  • ¼ cup chopped Brussel sprouts
  • small handful of frozen edamame beans
  • small handful of chopped onion
  • 2 cloves of garlic minced
  • 1 tsp olive oil
  • Liquid Aminos to taste
  • Sriracha to taste
  • Optional extra protein: teriyaki chicken, shrimp, or tofu

To the skillet:

First take the washed cauliflower and grate it on a box grater (medium sized holes). Transfer the grated cauliflower to a skillet with the olive oil, onion and minced garlic. Sauté until the onion is translucent about 2 minutes. Then place a lid on top of the skillet and steam the cauliflower on medium heat for 4-6 minutes. While the cauliflower is cooking, place the chopped broccolini, Brussel sprouts, and edamame in a steamer basket in a pot of water about 2” deep. Cover until veggies are fully steamed. Once the veggies are done place them in the skillet with the steamed cauliflower and turn down to low heat.  In a small frying pan cook the bacon to your desired liking. Once cooked leave a small amount of bacon grease in the pan and fry your egg! Top your cauliflower fried rice with the egg, bacon, Sriracha and liquid aminos! If you are looking to make this dish more of a meal try adding some teriyaki chicken, shrimp or tofu! I had leftover teriyaki chicken and it was a great addition to my dish!
