Almond Chocolate Chip Cookies

-Gluten free, grain free, refined sugar free, almost dairy free

-Makes 12 cookies

 

Ingredients:

  • ½ cup coconut flour
  • ½ cup almond flour
  • 1 tsp gluten free baking soda
  • 2 tbsp ghee (room temp)
  • 2 tbsp almond butter
  • ¼ cup coconut sugar
  • ¼ cup unrefined cane sugar
  • ¼ cup maple syrup
  • ½ tsp pure vanilla extract
  • 1 egg
  • 1 cup Enjoy Life mini chocolate chips
  • 1/3 cup chopped raw almonds

 

Directions:

1. Preheat oven to 375 degrees F

2. Combine the coconut flour, almond flour and baking soda in a bowl and put to the side. In a separate bowl beat ghee, almond butter, sugar, maple syrup, and vanilla extract together until creamy. Add in the egg and continue to beat. Slowly stir in the mini chocolate chips and chopped almonds. Place rounded spoonsful on a nonstick baking sheet.

3. Bake 8-10 minutes or until the bottom of the cookie is golden brown.
