Skinny Slowcooker- Rosemary Chicken & Potatoes

I think we eat crockpot meals at least 5-6 times a week. You might even say we are sort of obsessed. There's really nothing like a GOOD homemade hearty yet healthy pot of dinner, especially this time of the year on a cold rainy night.  Okay who am I kidding…on any night!!! The recipe below is so incredibly easy & takes no time at all; Perfect for the working mama or for a day full of appointments & other errands!

From the cutting board:

Andrew loves mushrooms so I always try to add them to whatever dinner I'm making.

For this recipe I used:

  • 1 handful of mushrooms
  • 1 handful of baby carrots
  • 10-15 fingerling potatoes
  • 5 garlic cloves
  • 5 organic chicken drumsticks
  • 3 stems of fresh rosemary

To the crockpot:

  • ½ c. chicken broth
  • ¼ c. white wine
  • ½ tsp each (oregano, basil, parsley, onion powder, garlic powder
  • salt and pepper to taste

First pour a layer of organic chicken broth covering the bottom of the pot (about ½ c.) Then add the ingredients from the cutting board placing in the chicken last. Next add remaining chicken broth & ¼ cup of white wine to the mixture. Finally add the sprigs of fresh rosemary as well as the other dry spices: oregano, basil, parsley, onion & garlic powder, topping it off with salt and pepper to taste. Then let the pot of deliciousness cook for 6 hours on low heat.

By the end of the 6 hours the chicken is practically falling off the bone & the potatoes & veggies are cooked to perfection. Tonight, I'm actually taking 2 of the drumsticks and adding them to my Dijon Balsamic Roasted Veggie Salad for myself and serving my hubby the rest of this hearty crockpot meal :)
