The Best Banana Cake Ever

I don’t do cake. Well… I “didn’t do cake” that is until I came across this recipe on allrecipies.com.   Seriously…before “The Best Banana Cake Ever”, I opted for my God Mother’s brownies and vanilla ice cream on my birthday, thanks Kerry, and we even had an assorted desserts bar instead of wedding cake on our big day.  Ok … we did have a small wedding cake but it was just for looks!

I found this recipe a few years ago when I was in charge of dessert for my BFF, Frankie’s, graduation party. I knew I wanted to bake a bunch of mini desserts but I also thought we should have the traditional party cake. That’s when I stumbled upon this banana cake recipe, and boy am I glad I did. Since that grad party, I’ve had countless requests for this cake for birthday parties, bridal and baby showers and most recently Christmas dinner.

If you too are not much of a cake person, I dare you to try this recipe. It pretty much tastes like banana bread on crack. It’s moist, dense, & utterly delicious. Oh, and did I mention it’s made with HOMEMADE CREAM CHEESE FROSTING. The last time I made this recipe, I opted to make cupcakes instead. I didn’t frost every cupcake, which allowed us to eat the leftovers as banana bread muffins in the morning. Same thing right?

I don’t take any credit for this recipe, I found it on the internet… but it is SO good that I HAD TO share it with you all. Enjoy!


            ¾ cup butter

            2 1/8 cup white sugar

            3 eggs

            2 tsp vanillas extract

            3 cups all purpose flour

            1 ½ tsp baking soda

            1 ½ cups buttermilk

            2 tsp lemon juice

            1 ½ cups mashed bananas

            ½ cup butter softened

            1 (8oz) package of cream cheese softened

            3 ½ cups confectioners’ sugar

            1 tsp vanilla extract


  1.  Preheat oven to 275 degrees F (135 degrees C). Grease and flour a 9x13 inch pan. In a small bowl, mix mashed bananas with lemon juice, set aside. In a medium bowl, mix flour, baking soda and salt. Set aside.
  2. In a large bowl, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy. Beat in the eggs one at a time, then stir in 2 teaspoons vanilla. Beat in the flour mixture alternately with the buttermilk. Stir in banana mixture. Pour batter into prepared pan.
  3. Bake in preheated oven for 1 hour, or until a toothpick inserted into the center of the cake comes out clean. Remove from oven and place directly into freezer (don't forget this part it really works) for 45 minutes. This will make the cake very moist.
  4. For the frosting: In a large bowl, cream 1/2 cup butter and cream cheese until smooth. Beat in 1 teaspoon vanilla. Add confectioners sugar and beat on low speed until combined, then on high until frosting is smooth. Spread on cooled cake.
